Nasi Impit / Lazy Man Ketupat / Compressed Rice
In celebration of Hari Raya / Eid (a religious holiday celebrated by Muslims that marks the end of Ramadhan - the holy month of fasting) I attempted to make chicken satay and ketupat!
Ketupat is a rice dumpling packed in a diamond shaped container of woven young palm leaf pouch and then boiled. It's not easy to find palm leaves here, and it is even more difficult to weave the little pouches! Hence, in a frail attempt to make ketupat (or nasi impit), I took the lazy man's approach. Quick and easy way to satisfy ketupat cravings - I used my beloved rice cooker! Haha :)

This is the fun and hard part! Compress the rice as much as you can! If you making nasi impit in larger quantity, you can place a heavy pot / cast iron pot on top of the rice to compress it further. Then leave it for half an hour (or put it in the refrigerator) before cutting it into cubes (or actually any size you want!)
